Asparagus soup

We love soups! Currently it is the asparagus season again and therefore you can make lot’s of great dishes with them, including soup!

This soup is fresh and super tasty, definitely something that you need to taste during this season!

Ingredients

The Soup

White asparagus 500 gr
Vegetable stock 1 cube
Chicken stock 1 cube
Onion 1
Chives  
Butter 2 spoons
Salt and pepper  
Croutons  
Eggs 2

Preparation Process

Peel the asparagus and cut off the bottom parts.

Put some water in a large pot and add both the stock cubes. Add the  peeled asparagus.
Boil for 15 minutes and then drain but keep the water aside.  Keep the asparagus apart and cut of the tops (Keep them separated for decoration)
Melt some butter and add small diced onion, fry over 1 minute on medium/low heat.  Add the flour and stir well, then keep stirring and then add  the stock.
Add the asparagus and puree with immersion blender. Add some salt and pepper . 
 
Boil the eggs for 6 minutes in boiling water. Serve with the eggs, croutons and chives.

Tips and variations

You can also make nice asparagus bruschetta’s on the side. Just take some toast, olive oil, salt and pepper and asparagus.
