Spinach Soup

Wow this is a healthy soup! This soup contains only healthy products like lots of spinach! We added some seeds to this soup to make it a little bit more tasty and to create some crunch.

Ingredients

The Soup (4pax)

Olive oil 2 spoons
Red onion 250 gr
Garlic 1 clove
Red pepper 1 teaspoon
Paprika powder 1 teaspoon
Caraway seed 1 teaspoon
Fresh mint 50 gr
Fresh parsley 50 gr
Vegetable stock 1 liter
Fresh spinach 500 gr
Lemonjuice 1 lemon
Pumpkin seeds 4 spoons
Sunflower seeds 4 spoons
Pepper  

Preparation Process

Heat up some olive oil in a big pan. Cut the onions in slices and the garlic and red pepper in very small pieces. Put them together with the paprika powder, pepper and caraway seeds in the pan. Put some of the fresh mint and parsley on top of it, not all of the mint and parsley!

Heat up the vegetable stock. When hot, add the stock to the vegetables and let it simmer for 10 minutes. Add the spinach and lemon juice and some extra salt and pepper and then mix it with a blender until you have a smooth soup. 

Serve immediately with some of the other seeds as garnish.
