Last week we did a cooking class at Gaggenau and we prepared a 4 course dinner! Daughter prepared the dessert which was a pear-almond pie. This worked out so well, that we want to share this recipe with you! It is an delicious pie with pears, so super tasty during this winter season.
The Almond paste
Mix the soft butter and eggs with a kitchenmachine until it is light and more white. Add the eggs one by one when the kitchen machine is still slowly running. Add the flour (sieved) and a pinch of salt and keep mixing until you have a nice batter.
Mix the almonds in a blender until you have crumbs. Add the eggs, lemon zest and sugar and mix again until you have a paste.
Peal the pears and cut them in nice slices and put some lemon juice on top so they are not turning brown.
Take a pie form and put some backing paper in the form. Pour the mixture first and then place the almond paste nicely over the dough. Make sure everywhere is some paste. Then place the pears on top. Make sure they are a bit into the dough and not only on top. Squeeze the lemon on top of the pie.
Put the pie in the oven on 180 degrees for 50 minutes.
