Pasta con patate

Another healthy variation on your basic pasta dish? Try pasta con patate, a typically Italian (Neapolitan) dish with whole grain pasta, potato, celery and carrot! A really nice ‘winter’ dish and a good variation for the kids as it is full of veggies!


Pasta Con Patate

Onion 1
Celery 2 stalks
Carrots 150 gr
Potato’s 200 gr
Tomato puree 2 spoons
vegetable stock 1 cube
Penne Interrgale 100 gr. per person
Olive oil
Salt / pepper
Water 500 ml
Parmesan cheese

Preparation Process

Cut all vegetables into small pieces and fry it in some olive oil. Add some salt, pepper and the tomato puree. When nicely mixed, add  one cup of water and the vegetable stock. Let is simmer for 45 minutes in a covered pan.

Cook the Penne Intergrale (pasta) until ‘al dente’ (+- 10 minutes) and add to the sauce. Serve it with some Parmesan cheese.
