Healthy Salad

Did you eat too much comfort-food the last few days? Compensate a bit with this healthy salad! We love to eat this for lunch and it is easy to prepare at home, or to take away to your work!


The Salad

Cucumber A half
Apple 1
Avocado 1
Sweet pepper 1
Chicory 1
Olive oil
Salt / pepper

The dressing

Ginger A piece
Lemon juice half a lemon
Salt / Pepper

Preparation Process

Cut all the vegetables in pieces and put it in a bowl.

For the dressing: Cut the ginger in small pieces and put together with the lemon juice, olive oil, salt and pepper in a blender. Spread the dressing over the vegetables.

Tips and variations

You can also add:

  • Fennel
  • Carrots
  • Chickpeas
