Lentil Cauliflower Soup

This cold weather asks for a warm soup! We had some leftovers in our fridge and therefore we prepared soup with just the ingredients we had in stock! That resulted in a delicious lentil cauliflower soup, just try it and you will believe us..



The soup (6pax)

Olive oil 2 spoons
Onion (small) 1
Celery 1 stalk
Carrot  1
Thyme 1 twig
Salt and pepper  
Cauliflower 1 half 
Cheese (Parmesan) 1 handfull
Lentils 1 cup

Preparation Process

Heat up some olive oil and add the onion, celery and carrot all chopped. Add thyme and
season with salt en pepper. Let this cook while stirring for 8 minutes.
Add the lentils and the vegetable stock cube  and bring it to boil. Then reduce the heat and let it simmer for 30 min. Then add the cauliflower and cook slowly for 3 more minutes.
Put your soup in some  soup bowls and top it off with some cheese and put it in the grill until golden  and bubbling. Serve with some thyme and fresh bread.

Tips and variations

You can also add other veggies!
