Autumn is a typical pumpkin season and with Halloween behind us, there is a big chance that the pumpkins are for sales now. So hurry yourselves to the store and get some!

Ingredients

The Soup

Water 1.5 liters
Pumpkin 1
Shallot 2
Garlic 1 clove
Carrot 2
Vegetable stock 1 cube
Fresh Tyme 1 stick
Fresh sage few leaves
Salt/pepper
Olive oil

Preparation Process

Cut the pumpkin in small l piece and put is together with the garlic, herbs, shallot ( in 4 parts) and some olive oil in a oven dish and put in the oven for 40 minutes at 190 degrees.

When ready, put the ingredients in a big pan and add the water and stock, when it is cooking mix it with a blender.

Tips and variations

When serving, you can add some cream fresh and fresh sage on top as well.

Also some sunflower seeds are nice for garnish.
