A lot of people try to eat less carbs during the week. This is a good way to balance your diet and to loose some weight. Although you need some carbs during the day to get some energy, but eating less is not a problem at all.
This dish is super healthy and very low in carbs. Because of the cauliflower rice you do not even notice that you miss some carbs!
For the tomato sauce use this recipe:
The ingredients (2pax)
|Parmesan cheese||1 hand|
|Tomato puree||1 spoon|
|Fresh parsley||A bunch|
|Cauliflower rice||400 gr|
|Tomato sauce||1x our basis tomato sauce|
|Salt and pepper|
First prepare the tomato sauce according to the recipe and let this simmer on low heat during the whole process of cooking the following items;
For the meatballs:
Add the minced meat, breadcrumbs, Parmesan, parsley, egg, tomato puree and some salt and pepper in a bowl. Knead it well and make small meatballs from this.
Fry the meatballs in a small layer of (mild) olive oil and on a medium/low heat. Turn them often. When ready, take them out and let them dry on some kitchen paper for 1 minute.
Boil in between frying the meatballs some water for the broccoli. Cut the broccoli in pieces and let if boil for 4 minutes until they have a nice bite.
Put the cauliflower rice in a pan with some olive oil and fry this for 2 minutes. Add some salt and pepper.
Add the rice, broccoli and meatballs in a bowl and put some tomato sauce on top of the meatballs.
Add some extra parsley and pepper and you are ready to go!
