Chimmichurri salmon with veggies

Making chimmichurri is super easy because you only need a few ingredients that you mostly have at home. You can add it sauce to almost all meat and fish products as it fits with a lot of different products.

Originally this sauce is placed on top of a beef but we also love it on shrimps or salmon. By adding this sauce you turn a simple dish in a party!



The chimmichurri salmon (2pax)

Salmon 2 pieces
Rice 1 cup
Carrot 2
Zucchini 0.5 
Fresh parsley 2 hands
Oregano 1 spoon
Garlic  1 clove
Salt and pepper 2 pinches

Extra vergine olive oil

5 spoons

Red chili pepper


Preparation Process

First the chimmichurri; 

Put the parsley, oregano, garlic, chili pepper, salt, pepper and olive oil in a blender and mix until you have a smooth paste. 

After that, boil the rice in water with a pinch of salt for 11 minutes (check the package of your rice.)

Cut the veggies in small slices and fry them on a low fire in some olive oil until they are ready. You can also use cubes but we like thin slices and bigger pieces of veggies. 

Then put some salt and pepper in the salmon and fry on the skin side for 3 minutes and then turn to the other side and finish it with 1 more minute. 

Last, place the rice and veggies on a place and add the chimmichurri sauce on top of the salmon. You can also put some sauce over the veggies if you like.

Tips and variations

You can also use other veggies of course!
