Coq au Vin is a delicious meal to eat with the rainy days. Mommy and Daughter just came back home after 4 days Mexico.. You can imagine the difference between the Mexico City and Amsterdam so therefore we share this recipe with you, in case you need a warm and comfort dish as well!



Coq au Vin (4pax)

Chicken drumsticks 4
Onions 2
Olive oil  
Salt and pepper  

Smoked bacon

200 gr
Flour  2 spoons
Red wine 500 ml
Fresh Thyme 2 sticks
Bay leaves 3
Mushrooms 250 gr
Garlic 2 cloves
Potato’s  400 gr
Chicken stock 250 ml

Preparation Process

Cut the onions in pieces and cut a garlic clove as well. Heat up some butter and oil in a pan and fry the chicken. When brown, take out the chicken and add on some salt and pepper. Lower the fire of the pan and add the onion, garlic, bacon and flour. Let this simmer for 5 minutes and then add the wine. Also add the thyme, stock and let this boil. Add the chicken and bay leaves and lower the fire and let this simmer for 30 minutes. Cut the mushrooms and potato’s in pieces of 4 and add them 10 minutes before the end time.
