Ingredients
The Stamppot
Potato’s | 500 gr |
Water | 175 ml |
Cream | 125 ml |
White wine vinegar | 1 spoon |
Curry powder | 2 spoons |
Olive oil | 1 spoon |
Brussel sprouts | 2 handsful |
Cauliflower | 1 |
Apple | 1 |
Parsnip | 2 |
Onions | 2 |
Rosemary | A bunch |
Stock | 1 Cube |
Bay leave | 2 |
Preparation Process
Cut the bottom lines from the sprouts and remove the outside leaves. Clean them in some water. Peal the onion and cut in rings. Peal the apple and remove the core and cut the apple in pieces. Cut the thyme in pieces as well.
Put the potato, parsnip (both pealed) and bay leaves in a pan and add the water and the vegetable stock. Let it boil. Let this simmer for 15 minutes.
Add the sprouts, cauliflower (in pieces) and let it boil for another 7 minutes.
Remove the stock by putting all the vegetables in a colander (Dutch: vergiet) remove the herbs. Put the vegetables back in the pan an mash it all. Add the cream, vinegar and curry powder.
Heat up a pan with some olive oil and fry the onions for 2 minutes. After that, add the apple and thyme for another 2 minutes.
You can serve this with some meat.
