We both love eating curry. Especially because you can add so many veggies, flavors and spices. Most of we time we prepare a green curry with paprika and beans and chicken or shrimps. So if you have some veggies left in your fridge? Use them in a delicious curry like this!
The curry (2pax)
|Snow peas||100 gr|
|Curry paste||1 green curry paste (I use fair trade green Thai curry)|
|Coconut milk||1 cann|
|Rice or Naan bread||1 cup of rice / 2 naan breads|
Cut the veggies and fry them in some olive oil in a big pan. After 5 minutes, add the curry paste and mix it all together. Add half of the can of coconut milk and lower the heat. Let it simmer for around 10 minutes, until you have well cooked veggies and a nice sauce.
Cut the chicken in pieces and fry them in another bowl with some oil and salt and pepper. When ready, add to the veggie mixture.
Put the naan bread in the oven for 5 minutes or cook the rice for 11 minutes in boiling water.
Serve the curry in a nice bowl.
You can also add some fresh coriander and some cassava chips.
Other option (Also on the picture)
Use green asparagus and peas as veggies and fry some codfish. Serve with rice.
