Pasta con le Zucchine

For the vegetarians here, we created this Sicilian pasta! It is a super easy pasta dish for your busy Monday.. However,we can conclude that it’s easy but as well extremely tasty! 


Pasta (4pax)

Zucchini 2
Penne intergrale 400 gr
Pecorino or Parmesan cheese  
Fresh mint Few leaves
Breadcrumbs 100 gr
Egg  1
Fresh parsley Few leaves
Salt / Pepper  
Olive oil extra vergine  

Preparation Process

Put the breadcrumbs, Parmesan cheese, parsley and salt and pepper into a bowl. Clean 1  zucchini and cut in slices from 1 cm thick. Break the egg and mix it. Put the slices into the egg and then into the breadcrumb mixture. Make sure the whole zucchini is covered with breadcrumbs. Fry the slices in some olive oil and when ready place on some paper to remove the oil. 

Cut the other zucchini into thinner slices or cubes and bake into some olive oil as well. Cook the water and put the pasta into the boiled water for 8 minutes (until al dente) When ready, add the pasta to the zucchini and serve with some pepper, Parmesan, mint and the fried zucchini. 

Tips and variations

If you want the non-vegetation version you can add some shrimps
