Pollo alla Cacciatora

Pollo alla cacciatora is an Italian chicken dish. It takes a while to prepare, but the taste of this meal is delicious! A chicken stew that is perfect to serve for a bunch of people, so ideal to eat during Christmas!

This dish can be prepared one day before Christmas, in case you are busy 😉


Chichen alla cacciatora (4pax)

Chicken drumsticks 8
Bay leaves 8
Rosemary 2 twigs
Garlic gloves 3 (1 whole, 2 in small pieces
Chianti red wine 1/2 bottle
Flower 4 spoons
Olive oil
Anchovies 6
Green and black olives 1 handful (without pips)
Peeled tomato cans 2
Salt / pepper

Preparation Process

Put some salt and pepper on the chicken drum sticks and put them in a bowl. Add all the herbs and the garlic in the bowl as well as the wine. Leave them for 1 hour in the refrigerator. (If possible longer!)

Take out the chicken from the wine and dry them with some paper. Keep the wine! Put the flower on the chicken and fry them in a pan with some olive oil, when they are turning brown, put them away from the fire.

Put the chicken on the fire again and add the garlic pieces. Then add the anchovies, tomato’s and the wine into the pan as well. Let it cook and when it cooks, put the pan (covered) into the oven on 180 degrees for 1.5 hour.

When ready remove the fat (if you see this) and take out the leaves of the herbs. Serve with e.g. some rice.
