Pumpkin lasagne

Lasagne is ultimate comfort food! Did you know that you can also make healthy types of lasagne? This lasagne is made with sheet from pumpkin instead of pasta! Less carbs and a delicious taste!



The lasagne (2pax)

Olive oil 2 spoons
Ui 1
Smoked paprika powder 1 spoon
Salt and pepper  
Peeled tomato’s in pieces 400 gr
Fresh chopped basil 1 hand
Sour cream 2 spoons
Pumpkin sheets (e.g Albertheijn) 250 gr
Mozzarella 1 boll
Grana padano 25 gr

Preparation Process

Heat up some oil in a pan and fry the sausages. Smash the sausages out of their skin. Add a chopped onion an fry for +- 5 minutes. Add the smoked paprika powder, salt and pepper and stir. Then add the can with tomato cubes and let this simmer for 15 minutes on low fire with a lit on the pan. Then add the fresh basil and sour cream to the sauce. 

Take a oven dish were the pumpkin sheets fit in. Pour some sauce in the oven dish and then add a layer of pumpkin. Then add again a layer of sauce and pumpkin sheets, also add a layer of mozzarella slices. Then add again some sauce and finish with the grana padano and some more mozzarella is you like. 

Put the lasagne into the oven and bake this on 180 degrees for 40 minutes.
