Pumpkin Walnut Ravioli

You probably know we love pasta.. We regularly prepare it ourselves and there are 1000 variations! Today we share this lovely pumpkin walnut ravioli with you.

The filling (4/5pax)

Pumpkin 0.5
Garlic 4 cloves
Shallot 1
Thyme A bunch
Salt and pepper  
Olive oil  
Butter  100 gr
Sage 10 leaves 
Walnut 50 gr
Parmesan Cheese  60 gr

Preparation Process

Prepare the dough according to our recipe. 

Cut the pumpkin in pieces and the shallot as well. Put everything on a baking tray and put it in the oven for 30 minutes. When ready put this in the blender and add the Parmesan cheese. Taste if it is ok or if you need more salt and pepper. 

When you have nice thin pasta slices prepare some rounds of it. Place a bit of pumpkin mixture in the middle. Break and egg and mix this and put some egg on the sides and fold the dough. Make sure it sticks together and press with a fork on the sides. 

For the sauce:

Melt some butter and add the sage leaves. 

Cook the ravioli’s for 4 minutes and serve with the sauce and some extra sage. 

Tips and variations

Also tasty when serving with some fresh tomato’s from the oven.
