Filled Italian Focaccia

Focaccia bread is an typical Italian bread which can have a lot of different flavors. It’s the perfect bread to eat with a some soup or just on itself as the flavors of this bread are really delicious! 

We didn’t prepare this very often, but lately we discovered it’s so simple and easy! For big groups of family and friends it is an easy appetizer as everyone will surely enjoy it!


The Dough

Strong bread flower 500gr
Yeast 1×7 sachet

The Filling

Fresh basil A big bunch
Parmesan Cheese 80gr
Garlic 1 Clove
Pine nuts 65gr
Lemonzest 3 spoons
Salt & Pepper

Preparation Process

Mix the flower, yeast and two spoons of Olive oil until it's a good dough. Place the dough in a bowl and cover with a cloth for 1 hour. Mix all the ingredients for the filling in a blender and create a 'pesto' out of it. When the dough is ready role it out, place the filling on one side of the dough and cover IT with the other half of the dough. Put some olive oil, salt and rosemary on top. Place in the oven for 25 minutes at 220 degrees.

Tips and variations

You can add any type of toppings you want. Think of tomatoes, olives, paprika, cheese, etc. It's nice to use as a bruschetta bread as well or to combine with a nice soup or other appetizers.
