A new type of pesto! Zucchini is a delicious vegetable to create pesto with. It is super tasty with any type of pasta, so try out this recipe for a new and delicious pasts sauce!
The Sauce (4pax)
|Olive oil||125 ml|
|Onion (sliced)||1/4 of one onion|
|Blanched Almonds||10 gr|
|Basil leaves||10 gr (bunch)|
|Pine nut||30 gr|
|Pecorino cheese||50 gr|
Slice the zucchini into rounds of 3-4 mm thick and remove the ends.
Heat some olive oil in a pan and add the onion, zucchini and a pinch of salt. Cook and keep stirring for 5 minutes.
Place the almonds, basil, pine nuts, Pecorino, olive oil and a half spoon of salt in a blender and add the zucchini and onions. Mix till you get a sauce.
Boil some pasta until al dente and add the pesto. Serve with some fresh basil and a bit of pepper.
