Chocolate coffee soufflé

We both always thought that making souffles is something difficult. Actually it is not! We tried it and this chocolate coffee souffle is super easy and super delicious! 



The Souffle (4)

Sugar 2 spoons
Butter 60 gr
Coffee 1 shot
Dark chocolate (80%) 150 gr
Eggs 3
Powdered sugar 50 gr

Preparation Process

Oil the cups first and put some sugar into the cups and make sure all side as covered with sugar

Melt the butter into a pan and add the chocolate while stirring. This need to be on very low heat! When the chocolate is almost melted, take the pan off the fire and keep stirring. Then add the espresso shot as well as the 3 egg yolks. (Not the whites!)

Put the egg whites into a kitchen machine and mix it. Add the powdered sugar while mixing. Make sure you get a meringue like egg white. 

Pour the chocolate mixture into the egg whites and mix it slowly together. Pour this mixture into the cups. You can keep this into the fridge until you need it. 

Preheat the oven on 200 degrees and place the cups in the middle of the oven. Let the souffles bake for 12 minutes 

Serve with some fresh fruit of ice cream. 

Tips and variations

You can also leave out the coffee.
