Classic Lemon Meringue Pie

This pie is one of Daughters favorites. This is definitely a classic pie and we prepared this already a lot. Therefore hereby the recipe of this pie.


Use the recipe of the lemon curd and meringue from this pie:

Lemon Meringue Pie


The Dough

Flour 250 gr
Butter (In pieces) 160 gr
White caster sugar 80 gr
Egg (mixed) 1/2
Salt A pinch

Preparation Process

Knead all ingredients from the dough together and oil a baking form. 

Role out the dough on a floured surface. Place the dough into the form and make some small gaps with a fork in the dough. 

Prepare the lemon curd according to the recipe above. 

When ready, add the lemon curd into the dough and bake the pie for 30 minutes on 180 degrees. 

When ready, let the pie cool down.

Prepare the meringue according to the recipe above and place it on the pie. 


Tips and variations

You can make nice shapes of the meringue or just place is on the whole pie.
