Dutch ‘Eierkoeken’

Dutch Eierkoeken, a favorite from Daughter as she takes them with her literally every where she goes. This is an easy recipe where you can take out around 11 cookies which are delicious as a snack.



Flower 100 gr
Sugar 80 gr
Baking soda 1 teaspoon
Lemon 1 x lemon zest + juice from 1/2 lemon
Eggs 2
Salt A pinch

Preparation Process

Split the eggs and make the egg whites stiff with a kitchen machine. Put the egg yolks, flower, baking soda, sugar and a pinch of salt in another bowl and mix this as well.  Add the egg whites to it and mix it all together.

Make small round of dough with 2 spoons and put it in the oven on 180 degrees for 11 minutes.

Tips and variations

The lemon in this recipe makes the cookies fresh, if you like a more vanilla taste, then add a drop of vanilla extract.
