Healthy Lemon Muffins

As I (Daughter) eat a little bit healthier I baked these healthy lemon muffins. They are made with oil and yogurt instead of butter which is way better.

They taste delicious and you can enjoy a muffin without guild.

Ingredients

The Muffins

Spelt flour 75 gr
Almond flour 100 gr
Coconut sugar 2 spoons
Yogurt 150 ml
Sunflower oil 100 ml
Baking powder 2 teaspoons
Lemon 1 (zest +juice)
Salt A pinch
Egg 1

Preparation Process

Put the egg, yogurt, oil, lemon juice and zest in a bowl and mix well. Then add the rest of the ingredients and stir. Stir not too long.

Pour the mixture in muffin cups and put the in the oven on 200 degrees for 20 minutes.

Tips and variations

You can add poppy seeds. This will give the muffins a nice look.
