Healthy Oatmeal Cookies

During busy school weeks, Daughter love to bake this type of cookies to take with her to school as a snack. It taste lovely but is definitely more healthy than a regular cookie from the supermarket…

Try it, and bake it for yourself or for your kids to take with them to school! You get for sure happy faces! Win-win situation right?

Ingredients

The Dough

Oatmeal 100 gr
Spelt-Flower 30 gr
Honey 2 spoons
Coconut oil (or other plant based oil) 1 spoon
Water 40 ml
Baking powder 1/2 teaspoon
Raisins 1 handful
Chocolate (75% dark) 30 gr
Cinnamon 2 spoons
Vanilla extract 1 drop

Preparation Process

Put the oil, water,honey, vanilla extract in a pan and heat it up. When one whole, put it away from the fire.

Put all the dry ingredients together and mix it. Then add the small chocolate pieces and raisins. Add the water mixture to the bowl with the dry ingredients and it and stir for a few times. Then make 8 small cookies out of it.

Put it in the oven on 160 degrees for 15 minutes.

Tips and variations

If you want you can also add:

  • Walnuts or other type of healthy nuts
  • Blueberries
