Healthy pecan bars

Since I (Daughter) work full-time I like to meal-prep some food on Sunday so that I can bring it to work. This time I made healthy pecan nut bars. It doesn’t contain sugar and is gluten free as well! A perfect in between snack!



The pecan bars

Oatmeal 175 gr
Unsalted pecan nuts 75 gr
Eggs 2
Almond flour 100 gr
Cinnamon  2 spoons
Salt  A pinch
Baking powder 1 teaspoon

For Dutchies: Appel stroop 

Others; treacle

3 big spoons

Preparation Process

Pre-heat the oven to 180 degrees.

Put the oatmeal in a blender and mix until you have a powder. Cut the pecan nuts in pieces and add this in a bowl with the oatmeal, almond flour, baking powder, salt and cinnamon. Mix the eggs and also add this to the bowl. Last, add the appel stroop / treacle in the bowl and stir well. 

Place this mixture on a baking tray with baking paper and put it in the oven for 25 minutes. 

Let cool down before you cut it into pieces/ bars.

Tips and variations

You can decorate the mixture with pecans on top before you put it in the oven.

It is also tasty when you add  2 cm of ginger rasp into the mixture.
