Lemon Meringue Pie

That there was not yet a lemon curd pie on this website is a shame! Daughter loves this and is almost addicted to lemons.. haha

Well, this time she prepared the classic lemon meringue pie only she put this in a modern jacket. Literally.. as this pie has an meringue layer over the whole pie! So delicious!

For the cake, use this basic recipe (without blueberries etc)

Lemon Blueberry Cake

Ingredients

The pie + Lemon curd

1x our recipe for basic cake 1x
Eggs 2
Sugar 200 gr
Lemon juice 125 ml
Lemon zest 1 lemon
Butter 150 gr
Egg yolks 2

The Meringue

Egg whites 6
Sugar 330 gr
Cornstarch 1 spoon
Vinegar 0.5 spoon

Preparation Process

Prepare the cake mix and put it in the oven. When it’s ready take it out and let it cool down.

Prepare the lemon curd:

Put the eggs, egg yolk, lemon juice and zest in a bowl and mix it with a spoon. Put it in a pan with thick bottom and heat it on a small fire until the sugar has melted. 

Cut the butter in small pieces and add 3 at the time into the egg mixture. Add new butter pieces when the others are melted. 

Keep stirring the lemon curd, when all butter is melted, stir for 5 more minutes until thicker. When ready sieve the lemon curd and let it cool down in the refrigerator.

Meringue:

Put all the egg whites in your kitchen machine and start mixing on high speed. Add sugar in small pieces and let it melt into the egg whites before adding more sugar. When almost ready (10 minutes mixing) add the cornstarch/vinegar mixture and mix a little bit more. 

Cut the pie layers and place some lemon curd on top of each layers. Then place the cakes on top of each other and add the meringue all over the pie. 

Burn your meringue with a small burner. When you do not have this you can put it in your oven/ grill for a few minutes.

Tips and variations

You can decorate the meringue with some lemons or raspberries.
