Speculaas madeleines

Daughter loves to bake madeleines and she already tried lots of variations. 

Speculaas is a Dutch spice, in English they call it spices biscuits. To add this cookie/speculaas spices into the dough of the madeleines is delicious! It perfectly suits the autumn flavors.



The madeleines

Butter 125 gr
Sugar 100 gr
Eggs 2
Flour 150 gr
Speculaas herbs 10 gr
Salt A pinch
Almond shaves A hand

Preparation Process

Mix the eggs and sugar in a kitchen machine until it has doubled its size. Heat up the butter so it melts and let cool down. Mix in another bowl the flour, salt and speculaas spices. Add the butter and the flour mixture into the egg mixture and mix until you have a light and airy texture.

Put this dough in the refrigerator for 45 minutes. 

Heat up the oven to 200 degrees and oil your madeleines form. Add some flour or breadcrumbs in the form to make sure the madeleines don’t stick on the form.

Add the dough into the forms and add some of the almond shaves on top. Bake for 15 minutes. 

Tips and variations

You can also add extra hazelnuts or vanilla.
