Madeleines are French small cakes that are in the shape of shells. Those shell shaped forms you can buy in any cook store of even in the supermarket sometimes! Without those shell shapes, a Madeleine is not a Madeleine 😉

Look below for the basic recipe, as well as a variation of disco Madeleines and lemon coconut Madeleines. 



Eggs 2
Flower 150 gr
Sugar 100
Butter 125 gr
Salt A pinch
Vanilla extract 1 teaspoon
Sunflower oil

Preparation Process

Mix the eggs and sugar together for 5 minutes until it looks light and the volume of the mixture is bigger. Add the flower and melted butter in small parts with a big spoon. To finish, add the salt and vanilla extract. Place the dough in the fridge for 2 hours.

Oil the shell form and put some breadcrumbs or flower on top, to make sure the Madeleines are not getting stuck at the form. Add the dough with 2 spoons into the small shell forms and bake in the oven for 10 minutes on 180 degrees.

Tips and variations

Make sure you oil the form extremely well! We experienced already some cakes stuck into the form…

If you want to decorate them like we did; 

Melt 200 grams of dark chocolate au bain Marie and add some chocolate on the Madeleines and add some sprinkles on top. 

For lemon coconut madeleines:

Do not add vanilla but add some lemon zest from 1 lemon and a bit of lemon juice (half a lemon) to the mixture. Also add a bit of coconut rasp.
