What is better than homemade pasta? Yup.. Nothing! We love gnocchi, the classic dishes but also the nice variations like this. It is a great process so start cooking this gnocchi soon!



The gnocchi (4pax)

Pumpkin  750 gr
Butter 2 spoons
Flour 175 gr
Egg yolk 1

Preparation Process

Peel and cut the pumpkin in pieces. Put this in a oven dish and place it in the oven for 30 minutes on 200 degrees. When this is ready puree the pumpkin with a blender. 

Put the pumpkin puree in a pan with the butter and fry on a high fire to reduce all the liquid. Put the pumpkin in a bowl again together with the flour and egg yolk, add some salt and pepper as you like. Knead this dough with a kitchen machine until you have a smooth dough. Let this cool down for 1 night.

Take out the dough and place this on a floured surface. Roll it out until you have a long sausage roll. Cut the roll in pieces of 2 cm. Press with a fork on the pieces to get the gnocchi shape. 

Boil the gnocchi in batched in a big pan for only 4 minutes. 

Serve with a sauce you like.
