Carrot banana muffins

We love adding veggies into our pastries. These muffins contains 150 grams of carrots! The muffins are made from whole wheat flour and coconut sugar which are healthier options than normal flour or sugar. They are a good option to eat as an afternoon snack!



The Muffins (+-12)

Banana’s 2
Carrots 150 gr
Pecan nuts 100 gr
Eggs 2
Coconut sugar 100 gr
Whole wheat flour 150 gr
Baking powder 2 teaspoons
Cinnamon  1 spoon

Preparation Process

Mix the eggs and the sugar until you have a light mixture (+-3 minutes)

Peel the banana’s and smash them. Then rasps the carrots and add it to the banana’s.

Sieve the flour, salt, cinnamon and baking powder and add it to the egg mixture. Mix this slowly. Then add the banana-carrot mixture and the chopped pecan nuts. Mix this all together. 

Take a muffin tray with muffin cups and fill the cups with the batter. 

Preheat the oven to 180 degrees and bake the muffins for 20 minutes. 

Tips and variations

You can also use other nuts if you like.
