Healthy food alert! This chili con carne is made with lots of veggies as we used cauliflower rice instead of normal rice. So no carbs and delicious veggies instead. Yummie!



The Chili con carne (2pax)

Shallots 2
Red pepper A half
Kidney beans 1 can 
Red paprika 2
Peeled tomato’s 1 can
Minced meat 500 gr
Tomato puree 1 spoon
Garlic 1 clove
Fresh parsley A bunch
Salt and pepper  
Chili powder  1 teaspoon
Cauliflower rice 500 gr

Preparation Process

Cut the shallots in small pieces as well as the paprika, garlic and red pepper. Put this in a pan and fry for 5 minutes with some salt and pepper and the chili powder and tomato puree. 
Then add  the peeled tomato’s and the  (cleaned) beans. Let this simmer for half and hour. 
You can buy ready made cauliflower as well as a cauliflower itself. If you have just a cauliflower then rasp it so you get ‘rice’
Fry the rice in a bit of olive oil with some salt, pepper and the parsley for 5 minutes. 
Serve the chili con carne with the rice.

Tips and variations

You can also add smoked paprika powder! It is delicious to add this in the beans mixture.
