Mexico week goes on! This delicious huevos Rancheros is a super delicious meal. It includes more healthy stuff than other Mexican food which is perfect for a weekday! This dish is also not that difficult and it looks so nice!
The Huevor Rancheros (4pax)
|Paprika powder||2 spoons|
|Grated cheese||100 gr|
|Creme fraiche||150 ml|
|Taco chips||100 gr|
|Salt and pepper|
Cook the beans according to the package. Cut the tomato’s in blocks and chop the onion finely. Fry the onion and tomato’s in a pan with some olive oil and paprika powder. Add the beans and some salt and pepper. Make 4 holes into the mixture and break the eggs in the holes. Add some cheese on top and let it simmer for 6 minutes on low heat. Cut the avocado in half, take out the heart and cut the avocado in stripes. Cut the parsley in small pieces and the lime in segments.
Put a spoon of cream fraiche on top and serve with the avocado, lime and parsley.
If you like you can serve it with some taco chips.
